Savory Saturday

Last Saturday was a delicious one.  The early morning started off with pancakes, even better, Mickey Mouse Pancakes.  This area of cooking is my dad’s specialty.  We left it to him while the girls “got ready”.  Pecans were cooked in the batter and “authentic” maple syrup was drizzled on top.  Everyone left the tables with their stomachs satisfied.

Afternoon rolled around, and I summoned up the courage to throw together some egg omelets.  I had never made an omelet before, and the idea of flipping the eggs without it crumbling into pieces was not an optimistic thought.  I gathered the ingredients and my three-year-old sister and I went for it.  My sister can crack an egg almost as well as me.  I am convinced; she is destined to be a chef.  My family and I naturally call her “the Little Chef”, but my favorite name for her is “Princess Chef”.  The omelets were delicious.  I chopped up a red pepper and grated white cheddar cheese.  Everyone wanted seconds!

Popcorn: What better way to the end the day?  My dad spread out the futon and we laid our sleeping bags across the top.  Sprawled out on the futon, watching a movie, dad announces that it is time to make some jiffy pop popcorn.  My sister’s eyes grew wide as the aluminum foil grew into a giant dome.

Sugar, Cinnamon Spice, and Everything Nice

Can you smell the spicy smell of cinnamon or feel the warmth of cocoa?

Greetings Readers!  Let me make you jealous…as I type, the scent of hot cocoa finds me in my room.  And I mean homemade hot chocolate made with Hershey’s cocoa and cold milk.  Oh how I love that smell!  Soon I will be sipping it from a large mug.  Speaking of delicious foods, that is what this post will be all about.  In this post I have decided to compile a few recipes that bring coziness and the feeling of warmth to a home.  I will also include a comfort-food recipe for this week-Potato Soup.

Let me begin with a “spice-up” recipe for cinnamon-apple tree ornaments.  This recipe will not only fill your home with the sweet smell of spice, but will also make many beautiful Christmas tree ornaments for next year!  Never too early to start planning!


  • What you will need:

1. 2 cups of applesauce

2. 2 cups cinnamon

3.  tacky glue (optional)

4. a pencil or a straw to poke holes into the ornaments

5. cookies cutters

6. colorful ribbon

Mix the applesauce and ground cinnamon  in a large mixing bowl.  Once thoroughly mixed, roll out the dough on wax paper about 1/2-1 inch thick.  Cut out fun shapes with various cookie cutters.  I recommend shapes like stars, gingerbread men, christmas trees, or candy canes.  Poke a hole in the top of the shape with a straw or pencil.   Once the shapes are formed, you can let them air dry for 3-5 days or you can bake them in the oven at 200 degrees until hardened.   If you bake them make sure you flip them over often.  I recommend air drying them.  Ours turned out better that way and they didn’t crack or break.  Once dried, string a piece of colorful ribbon through the hole and give as a gift or hang right on your next Christmas tree!

Another recipe I especially enjoy on winter mornings is a warm, soft, buttery slice of my mom’s pumpkin bread.   It is the best sweet bread that I have ever tasted.  I thought that I would share this delicious recipe with you.

Pumpkin Nut Bread

  1. 3 1/4 cups all-purpose flour
  2. 3/4 cup quick or old-fashioned oats
  3. 2 teaspoons baking soda
  4. 1 1/2 teaspoons pumpkin pie spice
  5. 1/2 teaspoon baking powder
  6. 1/2 teaspoon salt
  7. 3 eggs
  8. 1 3/4 cups LIBBY’S 100% natural solid pack pumpkin (15 or 16 oz. can)
  9. 1 1/4 cups granulated sugar
  10. 1 cup packed brown sugar               
  11. 1/2 vegetable oil {my family replaces the vegetable oil with 1/2 cup of melted butter}
  12. 1/2 cup water                                             {my family replaces the water and Evaporated Milk with 1 cup milk}
  13. 1/2 CARNATION Evaporated Milk
  14. 1 cup chopped pecans

Combine flour, oats, baking soda, pumpkin pie spice, baking powder and salt in a large bowl.  Beat eggs, pumpkin, sugars, water, oil, and evaporated milk in a large mixer bowl on medium speed until combined.  Beat flour mixture into pumpkin mixture on low-speed until blended; stir in nuts.  Spoon into 2 greased 9 x 5 inch loaf pans

Bake in preheated 350 degrees F. oven for 65 to 70 minutes or until toothpick inserted in center comes out clean.  Cool in pans for 10 minutes; remove to wire racks to cool completely.  Makes 2 loaves. 

Is your mouth watering yet?  Now we come to our final recipe for this post; Potato Soup.  I found this recipe creamy, calming and delicious.  I hope you will too.  Just the thing to end a busy day.  This recipe is not only extremely easy, but will leave everyone satisfied.

Potato Soup

  1. 6 medium potatoes {washed and cubed}
  2. 3 1/2 cups of milk
  3. 4 tablespoons or 1/4 cup of chopped onion
  4. 3 tablespoons butter
  5. 2 tablespoons flour
  6. Cayenne pepper (be careful while adding cayenne pepper; don’t use too much.  Cayenne pepper can be very strong!) , salt and black pepper to taste

Boil and lightly mash potatoes (leave slightly chunky) using potato water.   Brown the onion in butter, add flour, then potatoes, milk and seasonings.  Stir and heat until smooth.  Serve sprinkled with grated cheese.  Serves 5.

The Perfect Brunch-wich

If you forgot to eat breakfast and have barely enough time for lunch this sandwich is for you. It’s full of flavor and creativity, and makes the perfect brunch.

What you need:

  • Bread
  • Avocado
  • Egg
  • Cream Cheese
  • Bacon

You might be asking what is an avocado?  It’s a green fruit with buttery, smoothness on the inside.  Even though you might have never heard of it, just try it.  It can never hurt to try new flavors. In fact avocado has become one of my favorite things to eat.  You can put it in practically everything.



 To make the sandwich there are just a few steps needed.  Toast two pieces of bread to your desire or crispness,  spread cream cheese onto both slices of bread.  Fry an egg. (I prefer soft-fried, but not sunny side up)  Peel an avocado and slice it into several strips.  Usually one avocado is more than enough for two sandwiches.  If you are the only person eating this, save the other half of the avocado in cling wrap in the fridge.  Don’t be surprised if it starts to turn orange.  That’s just oxidation.  Fry a couple strips of bacon.  Put the egg and avocado onto the sandwich one on either piece of bread.  Then break the bacon to size to fit onto the sandwich. (I ate it without bacon and it was equally delicious)  Put the two pieces of bread together and “TA-DA” you have a brunch which!  It is so delicious someone even said that it would do great as their last meal.  It fills you up, and is quick to make.  So I hope you will try this delicious recipe!
